Breakfast at home in Southport, NC!

I’m home today… at my parents’ house that is, in North Carolina! Quick life update: I got a new job which won’t start until April 9 so I’ve been on “vacation” since my last day which was the 27th. I highly recommend this “break” in between jobs if you’re ever in a similar situation and if the new job can be flexible for when you start! 🙂

I got here 2 days ago and have been totally enjoying sleeping in, eating mom’s cooking, spending time with my little sister, going to the BEACH,… etc.!

Today my sister and I didn’t wake up until 10! Our parents weren’t around so Sarah and I made this Buttermilk Blueberry Breakfast Cake together (from Alexandra Cooks). This was a recipe I found on Pinterest over a month ago but I hadn’t tried it yet since blueberries have been pretty hard to come by.  My mom had a bag of frozen blueberries, so I just defrosted those and used them. Sarah and I think it turned out great!

This is the sister Sarah,… the youngest in our family, and the only one still at home (senior in high school).

What’s for Dinner | Sometimes I just want a salad…

After a week of work, it’s hard to want to cook a healthy meal on a weekend night…. it’s so much easier to grab pizza or get take out since it saves dishes and time. That’s really nice when I can be pretty lazy on the weekend :). However, it’s nice to eat something fresh and healthy, and this salad was really easy to throw together (10-15 mins. tops!). We got the idea from a family friend.

What you’ll need:

  • Mixed lettuce
  • 1 can artichoke hearts, chopped
  • 1 can sliced black olives
  • Chopped salami
  • Shredded Parmesan cheese, as much as you want
  • Vinaigrette dressing
Combine together and enjoy!

Wednesday Roundup | Colorful, Wonderful Spring

With yesterday being the first day of Spring, today is a roundup of some pretty spring-y things… er maybe just things that I thought looked to be for the Spring time.

Spring is definitely one of my favorite seasons. I love seeing the first bunch of tulips that seem to pop up out of no where. Or when the buds on trees suddenly burst with color. Or maybe it’s the smell in the air that gets me, of new life and growth everywhere. People’s moods seem to even brighten up!

On my way home from work yesterday, my feet were feeling so cramped in my flats and I suddenly realized sitting on the train that I can finally start wearing flip flops and sandals again! My feet will be so excited to be free finally! 🙂 We haven’t had a very bad winter (as far as winters go in Boston) but it’s been a really long time since I’ve been able to leave the house in open-toed shoes. It’ll be nice to be comfortable again. Maybe my goal for next year should be to invest in some comfortable flats that fit me right (but that are still cute of course)! I’m so happy it’s Spring time.

I want to send someone a greeting…

I come from a big family. Three boys and Five girls to be exact. My oldest sister is probably the most creative of the family. She was always stamping and scrapbooking,…making homemade gifts (including delicious baked goods), and trying to teach me how to do the same.

She was the first of us siblings to get married and she’s continued being artsy even now while being a mother of 3 children! She’s quite a sister and I look up to her so much. Today I wanted to feature some of her talent. She made these beautiful cards below. Don’t you think she should open her own Etsy shop? 🙂

My sister Elisabeth wanted to make sure I made it clear that some of her ideas come from other people’s… like this Bride & Groom one she said she copied and the bird cage one as well… I still think she gets credit for being able to pull these off so well!
